Gin and orange liqueur with lemon, shaken to a pale, smooth foam.

Ingredients
- 40 ml1⅓ ozLondon dry gin
- 30 ml1 ozCointreau
- 20 ml⅔ ozFresh lemon juice
- 15 ml½ ozEgg white
Makes one drink, about 105 ml before ice.
Method
- Put the coupe in the freezer to chill.
- Add everything to a shaker without ice and shake for 10 seconds to whip the egg.
- Add ice and shake again until the tin is very cold.
- Strain into the coupe.
